This smoothie is deceiving to the eyes and looks too healthy to drink for some but tastes exceptional and always is a crowd pleaser.
Prep time: 2mins
Cook time: 3 mins
Total time: 5 mins
Yield: 4 Cups
Ingredients
- 1 cup cold water or coconut water
- ½ cup ice
- 3-6 cups spinach
- 1 cup kale
- 1 banana or ½ cup of mango
- 1 apple or 1 pear
- 1 lemon’s juice
Instructions
- In a blender place water and ice into the blender. If you are using frozen mangoes, omit the ice
- Place your greens in the blender along the juice of half a lemon, apple and banana (if not using mangoes)
- Blend until creamy and smooth
- Depending on your acquired taste add more coconut water or water to thin and ice or mango to thick
- Fresher the better, drink up :)
Tips
- Use a high speed blender it makes all the difference, if you havent hopped onto the vitamix train since 2007 its never too late
- Use water or coconut water whatever you have on hand
- If I use coconut water I almost always use a banana or very little mango as it becomes too sweet for my liking
Bananas or Mango
- If you love the sweetness you can do both, but I find both together are too overwhelming so I usually lean towards the banana
- Frozen mango works wonderfully as the consistency becomes creamy and you can omit the ice
Apple or Pear
I try to make do with whatever is in the kitchen so if you have pears but no apples or vice versa feel free to use either or, the end taste is very similar.
Greens
I always do 2 huge handfuls of spinach and one huge handful of kale. All depends whats in season and whats on hand. There are times in the summer when we have beautiful bunches of romain in the garden and I’ll throw that in to, shake it up however you want :)
My ideal breakfast is my supreme oatmeal alongside this smoothie. I find this smoothie is great as a snack and fulfills my sweet tooth. I also find it extremely filling; call me crazy but I will make this smoothie before shifts and place the whole thing in a glass jar and take it to work. It's delicious, tart, sweet, and refreshing.
